Ingredients
  

  • 4 large russet potatoes
  • 1 tablespoon Canola oil
  • 2 teaspoons Kosher salt

  • Sour cream 
  • Shredded cheddar cheese
  • Scallions

Instructions
 

  • Heat the oven to 350 degrees Fahrenheit and position the racks in the middle and bottom third of the oven. Prepare the half sheet pan by lining it with aluminium foil.
  • With a stiff scrubbing brush, wash the potatoes thoroughly under running cold water. Dry them thoroughly on a kitchen towel. Poke 8 to 12 holes all over each spud with a fork, so that moisture can escape while cooking. 
  • Coat the potatoes well with the oil and place them in a bowl. Sprinkle the potatoes with kosher salt and place them directly on the middle rack of the oven.
  • Place the foil-lined half sheet pan in the bottom third of the oven to catch any drips.
  • Bake the potatoes for about 1 hour and 15 minutes, or until the skin is crisp but the flesh is soft and the interior is between 205 and 210oF.
  • Take the potatoes out of the oven using oven mitts. Create a dotted line on the top of each potato and then squeeze the ends towards each other to crack it open; watch out for the steam. Serve right away with your favorite toppings.
