Spray a 13x9x2-inch baking pan with cooking spray. Distribute croissant cubes evenly in pan. Whisk eggs in a separate bowl.
Mix whipping cream, milk, sugar, Frangelico, vanilla extract, and almond extract together until well blended. Cover bread cubes evenly with the sauce.
Sprinkle dried cranberries over the bread and press down with a spoon to absorb all the liquid. Let stand 30 minutes, occasionally pressing bread into custard mixture.
Heat the oven to 350 degrees Fahrenheit. Bake for about 40- 50 minutes or until the pudding is set in the center.
