Ingredients
  

  • 230 g Green beans (1 cup)
  • Chicken powder (to taste)
  • 5 cloves Garlic
  • Salt (to taste)
  • 2 tbsp Chili flakes
  • Vegetable oil (for frying)

Instructions
 

Preparation of Ingredients

  • Take 5 garlic cloves.
  • Peel the cloves and wash them.
  • After drying, mince the cloves properly.
  • Now take the green beans.
  • Trim the ends of the beans from both sides.
  • Wash them with clean water and then let them dry or dry them with a kitchen towel.

Frying 

  • Take a medium-sized pot.
  • Add some neutral oil to it.
  • Heat the oil and while heating, divide the green beans into a feasible amount of batches.
  • When the oil is heated, add a batch of green beans to it.
  • The beans will splatter. Be careful!
  • Also, add chili flakes and salt to taste.
  • Meanwhile, take a tray or a large dish and cover its surface with some paper towels.
  • After frying for 20-30 seconds, take out the beans to the paper towel dish.
  • Let the paper towel absorb extra oil.
  • Heat the oil again and repeat the same procedure for the remaining batches of green beans.

Making Garlic Oil

  • Take about 1 tbsp of leftover oil from green bean frying.
  • Take a new pan and add oil to it.
  • Then add minced garlic to the oil.
  • Add salt, black pepper, and chicken or mushroom powder a pinch each.
  • Cook on a low flame.
  • Turn off the flame when you feel like the aroma of garlic has been released in the oil.

Notes

  • To make sure of the characteristic wrinkles on the beans, fry them in batches and do not overcrowd them in the pan.
  • To add some more spice, you can add peppercorns or red chili flakes.
  • Chicken powder or chicken paste, both work well.
  • To try another different taste, you can try the same recipe with bok choy.
  • If you do not like chili, you can omit chili flakes and chili oil.
  • You can also use unsalted butter in place of neutral oil.
  • Do not skip the blanching step. It makes the beans appear more vibrant.
