Preheat the broiler on high heat. Cut the rolls crosswise through the centre using a serrated knife.
Put both halves with the cut side facing up on a baking sheet and cook under the broiler for 1 to 2 minutes until they become slightly toasted. Then, keep them aside.
Turn down the oven temperature to 350˚. Combine the mayonnaise, mustard, jalapeños, and honey in a small bowl and mix them together.
Using the same baking sheet, spread the mayonnaise mixture on the cut sides of the rolls.
Place the Swiss cheese slices in a single layer on the bottom halves of the rolls, slightly overlapping if necessary.
Arrange the ham slices evenly on top, followed by the cheddar cheese. Finally, cover with the top halves of the rolls.
Use a brush to apply olive oil on the tops of the rolls, making sure to cover them completely. Sprinkle poppy seeds over the rolls. Then, cover the baking sheet and bake for about 10 minutes.
Remove the cover from the tray and continue baking for an additional 10 to 15 minutes. Keep baking until the cheese has melted and the tops of the rolls are golden and toasted.
Garnish with chives. Cut along the lines of the rolls to separate them into individual sliders. Serve right away.
