Gather up all the ingredients you need and place them in a bowl.
Take a saucepan of medium size and place it on the stove over medium heat. Melt the butter and mix in the flour until it becomes a smooth mixture called a roux.
Allow the roux to cook for 1 to 2 minutes while you stir it.
Add the milk gradually, whisking it constantly, to combine and thicken the mixture. It will take around 10 minutes, but some cooking school instructors recommend 20 minutes.
If necessary, reduce the heat to medium-low.
Add in the salt, pepper, nutmeg, cheddar cheese, Parmesan cheese, and hot sauce.
Keep stirring until the cheese melts completely. Remove the sauce from the heat and use it immediately.

Notes
For a lighter sauce, use half-and-half instead of whole milk.
If you want a thicker sauce, cook it for a longer time or add more flour.
To make the sauce thinner, simply add more milk.
When storing the sauce, let it cool completely and then transfer it to a container that seals tightly. It can be refrigerated for up to 3-4 days.
To reheat the sauce, warm it gently over low heat until it is heated through.
