Ingredients
  

  • 1 pound Ground beef  70% lean
  • ½ White onion, diced
  • Cloves garlic (minced)
  • 2 teaspoons  Cumin
  • 2 teaspoons Chilli powder
  • 1 teaspoons Garlic salt
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 cups Tomato juice
  • ¼ cup Yellow cornmeal
  • 12 Taco shells
  • 2 cups Cheddar cheese , shredded

Instructions
 

  • In a big skillet, place the ground beef and cook it over medium-high heat until it turns brown, which usually takes around 10 minutes. While it cooks, make sure to break it into smaller pieces as it browns.
  • Next, add the onion and garlic to the skillet. Saute them until the beef is nicely browned and the onion becomes translucent.
  • To the skillet, add the cumin, chilli powder, garlic salt, kosher salt, and black pepper. Cook this mixture for an additional 1-2 minutes, making sure to stir it often.
  • Next, incorporate the tomato juice and cornmeal into the mixture. Simmer for 10-15 minutes, until the juice reduces and the cornmeal softens. Remember to stir occasionally.
  • If the mixture starts to clump, you can add more tomato juice or water to smoothen it out.
  • Arrange the taco shells on a sheet pan or in a baking dish. Fill each shell with approximately ⅓ cup of taco meat and sprinkle some cheddar cheese on top. Place them in a toaster oven or regular oven and broil until the cheese melts and turns gooey.
  • To complete the tacos, add your desired toppings and serve them.
