Pollo Borracho or drunken chicken is one of its type recipes that takes its name from the fact that it has been added to it. With very simple ingredients, the beer makes the chicken very soft and tender.
Cut down the chicken breasts into smaller pieces of almost equal size. (about 5 cm)
Then dice the tomato and slice the onion into long slices.
In a skillet, add extra virgin olive oil and heat it. Then add sliced onions and cook them on a medium flame until they are soft.
Then add diced tomatoes and chicken cubes to it. On the same medium flame, saute them for about 8-10 minutes. Flip the sides of the chicken cubes to cook from the other side also.
Then lower down the flame. Let the chicken cook on the lower flame for a few more minutes before adding the beer.
After adding beer, cook for another 15 minutes slowly. Make sure that the chicken does not stick or burn to the bottom of the skillet. Season with salt and pepper.
