Ingredients
  

  • 2-¼ lb Fresh leaf spinach
  • 4 tbsp Unsalted butter
  • 4 oz Cream cheese
  • 3-½ cups Half and half
  • ½ cup Grated parmesan cheese
  • 1 cup Mozzarella cheese
  • ½ tsp Freshly grated nutmeg
  • 1 medium Minced yellow onion
  • ¼ cup Flour
  • 3 cloves Minced garlic
  • 4 tsp Kosher salt
  • 1 tsp Coarsely ground black pepper

Instructions
 

  • In a large pot, add water and 2 tsp of salt. Boil the water and then add clean and washed spinach to the water. Cook for a minute or until the spinach wilts. Drain the water out of the spinach.
  • To cool down the spinach, rinse it with cold water. Then squeeze the water out. Chop the spinach bundles into ¾-inch widths.
  • Take a large skillet. Add the butter and melt it. Then add minced onion and garlic and cook for 10 minutes so that the onions turn translucent.
  • Add black pepper, 2 tsp of kosher salt, and nutmeg. Mix and add flour. Reduce the flame and mix the flour well. Then cook for 2-3 minutes until you can smell a nutty aroma.
  • Add half and half. Bring to a boil and add cream cheese and mozzarella cheese. Cook until the mixture thickens. It will take 7-8 minutes.
  • Add the cooked spinach and parmesan cheese. Stir well until combined. 
  • Morton’s creamed spinach is ready. Serve and enjoy!
