Morton’s Creamed Spinach is the creamiest way to consume your daily dose of iron: spinach. Most people find it difficult to eat the leafy vegetables due to their boring taste but this recipe will make you fall in love with the spinach itself.
In a large pot, add water and 2 tsp of salt. Boil the water and then add clean and washed spinach to the water. Cook for a minute or until the spinach wilts. Drain the water out of the spinach.
To cool down the spinach, rinse it with cold water. Then squeeze the water out. Chop the spinach bundles into ¾-inch widths.
Take a large skillet. Add the butter and melt it. Then add minced onion and garlic and cook for 10 minutes so that the onions turn translucent.
Add black pepper, 2 tsp of kosher salt, and nutmeg. Mix and add flour. Reduce the flame and mix the flour well. Then cook for 2-3 minutes until you can smell a nutty aroma.
Add half and half. Bring to a boil and add cream cheese and mozzarella cheese. Cook until the mixture thickens. It will take 7-8 minutes.
Add the cooked spinach and parmesan cheese. Stir well until combined.
