Ingredients
  

  • 225 Self raising flour
  • 100 Butter
  • 100 g Dark brown sugar
  • 100 Black treacle (or molasses)
  • 100 Golden syrup (or honey)
  • 1 Egg  
  • 2 tablespoon  Ground ginger
  • 1 teaspoon  Mixed spices (pumpkin spice)
  • 1 teaspoon  Bicarbonate of soda
  • 275 ml  Milk

Instructions
 

  • In a saucepan over low heat, combine cubed butter, sugar, black treacle, and golden syrup.
  • Gently stir until the butter melts and the mixture becomes smooth.
  • Remove from heat and allow to cool slightly.
  • In a large bowl, sift flour, and add bicarbonate of soda, ginger, and mixed spices.
  • Pour in treacle mixture, beaten egg, and milk. Mix until smooth.
  • Line a 32x20 cm (12x8 inches) baking tray with non-stick paper.
  • Spread batter evenly in the tray.
  • Bake in a preheated oven at 180°C (350°F) for 30 minutes.
  • Check with a skewer; it should come out clean.
  • Cool completely, then slice for serving.

  • Don't hurry; mix the ingredients well for a smoother texture.
  • Make sure your eggs and butter are at room temperature for better blending.
