  • 1 tablespoon Small capers (optional)
  • 2 tablespoon Cornichons (finely chopped)
  • 3 tablespoon Mayonnaise (to taste)
  • 3 tablespoon Extra-virgin olive oil
  • 1 tablespoon White wine vinegar
  • Parsley leaves (roughly chopped) small handful 

Instructions
 

  • Boil potatoes in salted water for 20 minutes until tender, then drain and let them cool.
  • Cut the potatoes into chunks, and place them in a bowl with shallots, capers, and cornichons if desired.
  • Add enough mayonnaise to hold everything together.
  • Combine olive oil and vinegar, adding enough for a slight tang.
  • Mix in finely chopped parsley to enhance the salad's flavour.

  • Opt for waxy potatoes like Yukon Gold or red potatoes. They hold their shape well and have a creamy texture.
