Ingredients
  

  • 1 1/2 cup  Cheddar cheese (shredded)
  • 1/4 cup  Mayonnaise
  • 1/3 cup  Sour cream
  • 8 ounces Crabmeat (cooked and chopped)  
  • 2 tablespoons Green onion (finely chopped)
  • 2 tablespoons  Green chiles (chopped)
  • 10 Flour tortillas (8-inch size) 
  • 2 tablespoons Butter (melted)

Instructions
 

  • Preheat the oven to 375°F.
  • In a bowl, combine cheese, mayonnaise, sour cream, crabmeat, green onion, and green chiles. Mix thoroughly. This filling can be prepared in advance and refrigerated for up to one day.
  • Lay the tortillas on a baking sheet. Spread roughly 1/4 cup of the mixture on one-half of each tortilla. Fold the tortilla over to encase the filling.
  • Brush the outer sides of the tortillas with melted butter.
  • Place the baking sheet in the preheated oven at 375°F and bake for 10-15 minutes, or until lightly browned and heated throughout.
  • Take the quesadillas out of the oven and cut them into wedges. Serve while hot.

Notes

  • Use fresh crab. It's the best choice.
  • Don't overcook. Keep them tender.
  • Add herbs. Try parsley or cilantro for more flavour.
