In a bowl, combine cheese, mayonnaise, sour cream, crabmeat, green onion, and green chiles. Mix thoroughly. This filling can be prepared in advance and refrigerated for up to one day.
Lay the tortillas on a baking sheet. Spread roughly 1/4 cup of the mixture on one-half of each tortilla. Fold the tortilla over to encase the filling.
Brush the outer sides of the tortillas with melted butter.
Place the baking sheet in the preheated oven at 375°F and bake for 10-15 minutes, or until lightly browned and heated throughout.
Take the quesadillas out of the oven and cut them into wedges. Serve while hot.
Notes
Use fresh crab. It's the best choice.
Don't overcook. Keep them tender.
Add herbs. Try parsley or cilantro for more flavour.
