Ingredients
  

  • 2 cups  All-purpose flour
  • 1 teaspoon  Baking powder
  • 1/2 teaspoon  Salt
  • 1 cup  Unsalted butter (softened)
  • 1 cup  Granulated sugar
  • Large eggs
  • 1 tablespoon  Lemon zest
  • 1/4 cup  Lemon juice
  • 1/2 cup  Confectioners’ sugar

Instructions
 

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • In a medium bowl, whisk flour, baking powder, and salt. Set aside.
  • In a large bowl, beat butter and sugar until light and fluffy (2-3 minutes). Add eggs one by one.
  • Mix in lemon zest and juice. Gradually add and mix in the flour mixture.
  • Use a scoop to place dough on the baking sheet, leaving 2-inch gaps.
  • Bake for 10-12 minutes until lightly golden. Cool on a wire rack.

Notes

  • Use fresh lemons for that real lemony taste. Don't skip the zest!
  • After mixing, let the dough chill in the fridge for an hour. It makes it easier to work with.
  • Use a cookie scoop for cookies that are the same size and bake evenly.
