- 1 teaspoon Baking powder
- 1/2 teaspoon Salt
- 1 cup Unsalted butter (softened)
- 1 cup Granulated sugar
- 2 Large eggs
- 1 tablespoon Lemon zest
- 1/4 cup Lemon juice
- 1/2 cup Confectioners’ sugar
Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a medium bowl, whisk flour, baking powder, and salt. Set aside.
In a large bowl, beat butter and sugar until light and fluffy (2-3 minutes). Add eggs one by one.
Mix in lemon zest and juice. Gradually add and mix in the flour mixture.
Use a scoop to place dough on the baking sheet, leaving 2-inch gaps.
Bake for 10-12 minutes until lightly golden. Cool on a wire rack.
