- 1 lb Braising steak (Cut into very small pieces) (450 g)
- 8 oz Black beans (Dried) (225 g)
- 1 oz Fresh coriander (reserving the leaves for the salsa) (25 g)
- 2 tablespoons Olive oil
- 2 Medium Onions (chopped)
- 1 clove Garlic (crushed)
- 2 Green chillies (deseeded and chopped small)
- 1 rounded tablespoon Plain flour
- 2 x 14 oz Tins chopped tomatoes (400 g)
- 1 Large red pepper
- ½ Juice lime
- Salt
For the avocado salsa:
- 2 Firm tomatoes (large)
- 1 Ripe firm avocados
- ½ Small red onion(finely chopped)
- ½ Juice lime
- A few drops of Tabasco sauce
- Salt and freshly milled black pepper
To serve:
- 4 tablespoons Crème fraîche
To prepare beans, soak overnight or 3 hours before. Heat the oven to 300°F.
Store coriander leaves, and finely chop stalks.
In a casserole, sauté onions, garlic, coriander stalks, and chillies for 5 minutes.
Brown beef in batches, remove and add flour. Stir in beans and tomatoes. Cover and bake for 1.5 hours.
Add chopped pepper and bake for 30 minutes.
For salsa, peel tomatoes, deseed, and chop finely. Dice avocado and onion.
Mix with seasoning, lime juice, coriander, and Tabasco.
Add salt to taste before serving with rice and crème fraîche.
