4 tablespoons Unsalted butter (plus more for baking dish) (½ stick) Coarse salt and freshly ground pepper 3 cups Elbow macaroni 2 Cans Evaporated milk (12-ounce) ⅓ cup Skim milk 2 large Eggs ½ teaspoon Seasoned salt ¼ teaspoon garlic powder 2 packages extra-sharp cheddar cheese (grated) (8-ounce) 1 package Monterey Jack cheese (grated) (8-ounce) Paprika (for sprinkling)
Preheat the oven to 375°F.
Butter a 9x13-inch glass baking dish generously.
Boil water, add salt, and cook macaroni until al dente.
Drain macaroni, and return to pot.
Toss with butter until coated and melted; set aside.
Whisk evaporated milk, skim milk, and eggs in a bowl.
Add seasoned salt, garlic powder, 1 tsp salt, 1/2 tsp pepper; set aside.
In another bowl, combine the cheeses; set aside.
Place 1/3 macaroni in a baking dish. Cover evenly with 1/3 cheese.
Repeat with the remaining macaroni and cheese mixture.
Pour the milk mixture over the contents.
Sprinkle with paprika.
Bake until lightly browned (35-45 minutes).
Allow it to stand for 10-15 minutes before serving.
Start with good cheese for the best taste.
A little nutmeg adds a nice flavour.
Be patient while cooking the cheese sauce; slow and low is the way to go.
