- 2 ½ cups Water
- 1 lb Lean ground beef
- 1 medium Onion (chopped)
- 1 jalapeno pepper (seeded and minced)
- 1 can Whole kernel corn (drained) (15 ounce)
- 1 can Black beans (rinsed and drained) (15 ounces)
- 2 cans Tomatoes (crushed) (15 ounces)
- 2 cans Pinto beans (drained) (15 ounces)
- 1 can Tomatoes and Green chiles (such as RO*TEL®) (diced) (10 ounce)
- 1 can Black olives (sliced and drained) (3.8 ounces)
- 1 envelope Taco seasoning mix (1 ounce)
- 2 tbsp Ranch dressing mix
In a 4-quart soup pot, cook beef, onion, and jalapeño until done.
Add water, tomatoes, pinto beans, corn, black beans, RO*TEL, olives, ranch, and taco seasoning. Mix well.
Bring to a boil, then simmer for 30 minutes.
- Cook the ground beef perfectly before adding other stuff. This makes the soup taste even better.
