- 200 ml Chicken or beef stock
- 400 g Kidney beans (drained and rinsed)
- 1 Large Onion (Chopped)
- 2 cloves Garlic (Finely chopped)
- 1 Bay leaf
- 1 Red chilli Deseeded (or half seeds for spice)
- 2 Sprigs Thyme (Leaves picked and roughly chopped)
- Olive oil (for frying)
- 3 tablespoons Tomato puree
- 500 grams Beef mince (Good quality)
- 2 teaspoons Sweet paprika
- 1 teaspoon Oregano (Dried)
- 1 teaspoon Ground cumin
- 3 Fresh tomatoes (Roughly chopped)
- 400 grams Canned chopped tomatoes
- 2 tablespoons Tomato puree
- 1 stick Cinnamon
- Pepper to taste
- Salt to taste
In a large saucepan, sauté onion, garlic, chilli, and thyme in oil.
Brown mince separately, then add dried spices to the onion mix.
Stir in beef, fresh and tinned tomatoes; cook for 5 minutes.
Pour stock, and add tomato puree, cinnamon, and bay leaf. Simmer.
As the sauce thickens, add kidney beans; simmer for 5-10 minutes.
Check seasoning. Enjoy the flavorful result.
