Ingredients
  

For The Cakes

  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 cup Unsalted butter
  • 1 cup Granulated sugar
  • 2 teaspoons Vanilla
  • 1 egg
  • 1/2 teaspoon Salt
  • ¾ cup Milk

For The Filling

  • ¾ cup Unsalted butter
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla
  • ¼ teaspoon Salt
  • 2 cups Marshmallow cream
  • ¼ teaspoon  Vanilla bean paste

Instructions
 

For The Cakes

  • Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
  • Combine the butter and sugar in a stand mixer and beat until light and fluffy, about 5 minutes. Stir in the vanilla and egg and scrape down the side of the bowl.
  • In a large bowl, combine the flour, salt, and baking soda. Mix with a low speed until combined well. 
  • Add half a cup of the dry ingredients to the butter mixture at a time, alternately with the milk, beginning and ending with the flour.
  • Scoop batter onto baking sheets spaced 2 inches apart on all sides, using a 1/4 cup measuring cup. Makes 12 cakes in total.
  • Place the baking sheets in the oven and bake for 15-18 minutes at 350 degrees, switching them halfway through. 
  • Remove the baking sheet from the oven and place on a cooling rack and allow to cool completely.

For the Filling

  • Mix together the powdered sugar and butter using a stand mixer on medium speed until light and fluffy.
  • Stir in salt and vanilla. Beat in marshmallow cream until fully combined. Add vanilla bean paste and stir to combine.

To Assemble

  • On the flat side of half the cakes, spread 1/3 cup of filling. Make sure that the filling stays on but is spreadable. 
  • Place it in the refrigerator if it is sliding off or add a bit more powdered sugar if necessary. If it's too soft, add a few drops of milk.
  • To make a sandwich, put the rest of the cakes on top. Enjoy right away or store in the refrigerator.
