- 4 cups Chicken thighs (cooked and shredded)
- 1 tablespoon olive oil
- 1 large onion (diced)
- 1 medium red bell pepper (diced)
- 4 garlic cloves (minced)
- 16 oz Sour cream
- 16 oz Jarred salsa (use either hot, medium, or mild)
- 4.5 oz Green chiles (chopped)
- 1/2 cup Cilantro (chopped)
- 1 teaspoon Chili powder
- 1 teaspoon Cumin
- 12 oz Mexican cheese blend (shredded)
- 15 corn tortillas
Preheat the oven to 400 degrees Fahrenheit. Pour olive oil into a medium skillet and heat over medium-high heat.
Sauté the onion and bell pepper for 3-4 minutes, until soft and golden brown. Stir in the garlic and cook for one more minute.
Combine peppers, onions, and garlic with chicken, sour cream, green chilies, salsa, chili powder, cilantro, and cumin in a large bowl.
Cut the tortillas into small pieces. Spread 1/4 of the chicken mixture in a 13*9-inch baking dish.
Add 3/4 cup of cheese, one layer of cut tortillas, and repeat two more times.
Add the remaining 3/4 cup of cheese and 1/4 of the chicken filling to the top.
Place the baking sheet in the oven and bake for about 25 minutes or until golden brown.
Take it out of the oven and serve it warm. Enjoy!
