Ingredients
  

  • 4 cups Chicken thighs (cooked and shredded)
  • 1 tablespoon olive oil
  • 1 large onion (diced)
  • 1 medium red bell pepper (diced)
  • 4 garlic cloves (minced)
  • 16 oz Sour cream
  • 16 oz Jarred salsa (use either hot, medium, or mild)
  • 4.5 oz Green chiles (chopped)
  • 1/2 cup Cilantro (chopped)
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 12 oz Mexican cheese blend (shredded)
  • 15 corn tortillas

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit. Pour olive oil into a medium skillet and heat over medium-high heat.
  • Sauté the onion and bell pepper for 3-4 minutes, until soft and golden brown. Stir in the garlic and cook for one more minute.
  • Combine peppers, onions, and garlic with chicken, sour cream, green chilies, salsa, chili powder, cilantro, and cumin in a large bowl.
  • Cut the tortillas into small pieces. Spread 1/4 of the chicken mixture in a 13*9-inch baking dish.
  • Add 3/4 cup of cheese, one layer of cut tortillas, and repeat two more times.
  • Add the remaining 3/4 cup of cheese and 1/4 of the chicken filling to the top.
  • Place the baking sheet in the oven and bake for about 25 minutes or until golden brown. 
  • Take it out of the oven and serve it warm. Enjoy!
