Trinidad Scorpion Hot Sauce Recipe

Ingredients
  

  • 1 pound Hot peppers
  • 1 head Garlic (peeled)
  • 1 cup  Vinegar
  • 1 tablespoon Salt
  • Mason Jars with lids

Instructions
 

  • Remove all stems from the peppers. Be sure to wear gloves when washing the peppers. 
  • Grind peppers and a few garlic cloves together in batches in a food processor or blender. Pulse in some vinegar.
  • Stir this mixture into a pot and repeat with the remaining peppers.
  • Place the pot on the stove, add salt, and cook on medium heat.
  • Prepare a second pot by filling it with water and bringing it to a boil. Add all the lids from jars to the hot water.
  • Turn off the heat as soon as you see the pepper sauce beginning to bubble, and immediately pour the hot sauce into jars.
  • Close the jars with lids, but do not overtighten. The hot air will cause the lid to seal properly when it is let in.
  • Keep these jars of hot sauce in a cool, dry place. Once you open a jar of sauce to use it, keep it in the refrigerator until you're ready to use it. Enjoy!
