This is a family recipe that we have come up with over the years. It’s a traditional favourite that we all love. They’re tender and flavorful, and making them is a great way to get a great piece of meat every time.
Remove the meat from the refrigerator two hours before roasting and allow it to come to room temperature.
Clean the oven, allow it to preheat to 500 degrees F. This should take about 10 to 15 minutes. Set the oven rack to the second-lowest position.
Place the roast, bone-side down, on a large pan; if the pan is not large enough, use a larger one.
Rub salt and pepper thickly over the roast top, then roast it for 45 minutes at 500 degrees F.
Reduce the oven temperature to 325 degrees Fahrenheit without removing the meat, and continue roasting for another 30 minutes.
Roast your meat for another 15 to 30 minutes at 450 degrees F, until the internal temperature reaches 125 degrees F.
Make sure your meat thermometer is in the exact center of your roast for the best results. It may take between 1 1/2 and 1 3/4 hours to cook the roast.
Prepare the sauce by whisking together the mayonnaise, horseradish, mustard, sour cream, and salt in a small bowl.
Remove the roast from the oven when it is done cooking and transfer it to a cutting board. Allow it to rest for 20 minutes, then cover tightly with aluminium foil. Slice it and serve with sauce. Enjoy!
