- 1 pound Fresh cranberries (washed and sorted)
- 1/4 cup Orange juice (freshly squeezed)
- 1/4 cup 100% cranberry juice (not cocktail)
- 1 cup Honey
In a 2-quart saucepan over medium heat, combine orange juice, cranberry juice, and honey.
Bring to a boil, then reduce heat to medium-low and let simmer for five minutes.
Add the cranberries and cook for 15 minutes, stirring occasionally, until the berries burst and the mixture thickens.
Do not cook the sauce longer than 15 minutes as the pectin will begin to break down and the sauce will not set properly.
Take the sauce off the heat and let it cool for five minutes.
Pour the cranberry sauce carefully into a 3-cup mold. Let it sit in the refrigerator for at least six hours or overnight.
Remove from the refrigerator, turn the mold upside down, and remove the sauce. Cut into slices and serve. Enjoy!
