Ingredients
  

  • 3 tablespoons olive oil 
  • 3 garlic cloves (Minced)
  • 1 onion (Minced)
  • 4 stalks celery (diced)
  • 4 large carrots (diced)
  • 12 cups of water
  • 1 whole chicken (about 5-6 lbs)
  • 2 chicken bouillon cubes
  • 2 bay leaves
  • 4 tablespoons fresh parsley
  • 2 ½ cups egg noodles
  • ¼ teaspoon salt adjust to taste
  • ¼ teaspoon pepper 

Instructions
 

  • In a large heavy-bottomed soup pot or Dutch oven, heat 3 tablespoons of olive oil.
  • Add the celery, onions, garlic, and carrots, along with a pinch of salt and pepper. Sauté until softened, about 6 minutes.
  • In a soup pan, add 12 cups of water and a whole chicken. Heat the soup until it boils.
  • Boil the soup for 2 hours, then reduce the heat to low. If the chicken is fully cooked after 2 hours, remove it from the pan and allow it to cool before handling it.
  • It is time to remove the meat from the chicken. Get rid of any bones, cartilage, or skin. Put the chicken meat back into the soup pot.
  • Add 2 chicken bouillon cubes, 2 bay leaves, and 4 tablespoons parsley to the pot. Stir and bring to a boil once more.
  • Once the soup is boiling, reduce the heat to low and add 2 1/2 cups of egg noodles. Let it simmer for another 30 minutes.
  • Before serving, season the soup with salt and pepper if necessary. Enjoy!
