Ingredients
  

  • 2 tablespoons olive oil
  • 1 cup yellow onions (diced)
  • 2 ½ lb brisket
  • 4 cups beef broth
  • ½ lb. Baking potatoes (preferably Yukon Gold)
  • 3 cups carrots (diced)
  • ¼ lb. Green beans
  • 3 sprigs rosemary
  • 3 sprigs thyme
  • ½ tablespoon salt
  • ½ tablespoon pepper

Instructions
 

  • Preheat the oven to 275°C. Heat olive oil in a pot.
  • Sauté onions in oil. When the onions are done, remove them and set them aside.
  • Add the brisket to the same pot. Cook it on all sides. Take it out and set it aside.
  • In the same pot, combine beef broth, potatoes, carrots, onions, green beans, rosemary, thyme, salt, and pepper.
  • Cover the pot and bake for one and a half to two hours in the oven.
  • Remove from the oven and slice into medium-sized pieces. Serve immediately!
