2 tablespoons olive oil 1 cup yellow onions (diced) 2 ½ lb brisket 4 cups beef broth ½ lb. Baking potatoes (preferably Yukon Gold) 3 cups carrots (diced) ¼ lb. Green beans 3 sprigs rosemary 3 sprigs thyme ½ tablespoon salt ½ tablespoon pepper
Preheat the oven to 275°C. Heat olive oil in a pot.
Sauté onions in oil. When the onions are done, remove them and set them aside.
Add the brisket to the same pot. Cook it on all sides. Take it out and set it aside.
In the same pot, combine beef broth, potatoes, carrots, onions, green beans, rosemary, thyme, salt, and pepper.
Cover the pot and bake for one and a half to two hours in the oven.
Remove from the oven and slice into medium-sized pieces. Serve immediately!
