Ingredients
  

  • 3 pounds Corned beef brisket (with spice packet)
  • 1 onion (quartered)
  • 15 ounces Beef broth (low-sodium)
  • 1 pound Red potatoes (quartered)
  • 2 cups Carrots (sliced)
  • 1/2 head Cabbage (cut in wedges)
  • Freshly cracked pepper (to taste)

Instructions
 

  • Rinse the corned beef in water and place it in the crockpot. Sprinkle the spice packet on the beef.
  • Put the onion on top and tuck the ends into the sides. Add the beef broth all around the pot.
  • Pour water into the can until it almost covers the brisket. Cook on low for 8-10 hours.
  • Add the carrots and potatoes three hours prior to serving. Finally, add the cabbage 30 minutes before serving.
  • Remove the corned beef from the slow cooker when it is fork-tender and let it rest for a few minutes.
  • Slice and serve it with vegetables. Enjoy!
