2 boxes Lipton soup mix 8 cups of water 2 tablespoons olive oil 1 small white onion (medium chop) 1 cup carrots (thinly sliced) 1 stalk celery (thinly sliced) 1 rotisserie roasted chicken
Heat the olive oil in a large stockpot over medium-high heat.
Stir and saute onion, celery, and carrots in a pot until the onion is soft and translucent.
Stir in the water, cover, and bring to a boil over low heat for five minutes. Combine soup mix with broth and stir.
Shred the meat from the chicken with your fingers, and place it in a stockpot.
Continue to cook over low heat for five more minutes. Serve immediately.
