Ingredients
  

  • 2-3 bananas
  • 4 tablespoons unsalted butter (softened) 
  • 2 large eggs
  • cup sugar
  • 1 ⅓ cups flour
  • ¾ teaspoon salt
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon cinnamon

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit. Mash a banana finely in a large bowl. You can use a potato masher or a fork for this.
  • In a separate bowl, beat the eggs until they are free-flowing. Add the eggs and sugar to the mashed banana.
  • Combine the flour, salt, baking soda, baking powder, and cinnamon in a separate bowl. Make sure there are no lumps.
  • Whisk together the wet and dry ingredients. If you wish you can add anything else you like to the batter at this stage, for example, chocolate chips, raisins, dried fruits, or finely chopped nuts. Do not add more than 1/2 cup to the mixture.
  • Butter a 9-inch pan and line it with baking paper. Fill the pan with the batter.
  • Place the pan in the oven and bake for 50 minutes at 350 F or until a toothpick inserted in the centre of the loaf comes out clean.
  • Remove the bread from the oven, let it cool, and then enjoy!
