Pioneer Woman Tater Tot Casserole is a breakfast casserole that is easy to make, and it’s also insanely delicious. They’re basically little potato shells smothered in melted cheese and then drenched with a quick Hollandaise sauce.
1 large sweet pepper (red, orange, or yellow), seeded and diced
1 pound ground turkey (preferably 90-93% lean)
1 cupsalsa
1, 15 oz. can black beans or pinto beans (drained and rinsed)
2 cups reduced-fat shredded Mexican cheese blend

sour cream, extra cheese, cilantro, black olives, shredded lettuce, tomatoes, etc.
Instructions
Preheat the oven to 425 degrees Fahrenheit. Mix chili powder, onion powder, garlic powder, oregano, cumin, paprika, and cayenne pepper in a small bowl.
Heat the olive oil in a 12-inch cast iron skillet or other non-stick skillet. Cook until the oil sputters when flicked with water.
Stir the onion and sweet pepper in the skillet for 4 minutes, or until the onions are translucent and the peppers are soft.
Cook the ground turkey and seasonings with the onions and peppers for 4-5 minutes, stirring and breaking up the turkey as it cooks, until the meat is crisp and cooked through, and the mixture is fragrant.
Mix the turkey mixture with the salsa and drained beans. Cook the ingredients for 5-7 minutes, stirring every 1-2 minutes, or until the liquid is absorbed and the mixture is thickened.
Turn off the heat and remove the pan. In a cast-iron skillet, spread the cheese evenly over the turkey and then distribute the tater tots evenly.
if using a non-stick or non-oven safe skillet. Pour the turkey into a greased 8 x 13 inch baking dish and top with cheese, Pipe the tater tots over the turkey and sprinkle with cheese.
Place the dish in the oven and Bake for about 22-25 minutes, or until the tater tots are crispy and the cheese is melted. Remove from the oven and serve hot with taco toppings of your choice. Enjoy!
