Ingredients
  

For The Taco Seasoning

  • 1 ½ teaspoon chili powder
  • ¾ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika (smoked)
  • ¾ teaspoon oregano (dried)
  • ⅛-1/4 teaspoon cayenne pepper (optional)

For The Tater Tot Casserole

  • 2 ½ cups frozen tater tots
  • 1 ½ tablespoon olive oil
  • ½ large white or yellow onion (diced)
  • 1 large sweet pepper (red, orange, or yellow), seeded and diced
  • 1 pound ground turkey (preferably 90-93% lean)
  • 1 cup salsa
  • 1, 15 oz. can black beans or pinto beans (drained and rinsed)
  • 2 cups reduced-fat shredded Mexican cheese blend

  • sour cream, extra cheese, cilantro, black olives, shredded lettuce, tomatoes, etc.

Instructions
 

  • Preheat the oven to 425 degrees Fahrenheit. Mix chili powder, onion powder, garlic powder, oregano, cumin, paprika, and cayenne pepper in a small bowl.
  • Heat the olive oil in a 12-inch cast iron skillet or other non-stick skillet. Cook until the oil sputters when flicked with water.
  • Stir the onion and sweet pepper in the skillet for 4 minutes, or until the onions are translucent and the peppers are soft.
  • Cook the ground turkey and seasonings with the onions and peppers for 4-5 minutes, stirring and breaking up the turkey as it cooks, until the meat is crisp and cooked through, and the mixture is fragrant.
  • Mix the turkey mixture with the salsa and drained beans. Cook the ingredients for 5-7 minutes, stirring every 1-2 minutes, or until the liquid is absorbed and the mixture is thickened.
  • Turn off the heat and remove the pan. In a cast-iron skillet, spread the cheese evenly over the turkey and then distribute the tater tots evenly.
  • if using a non-stick or non-oven safe skillet. Pour the turkey into a greased 8 x 13 inch baking dish and top with cheese, Pipe the tater tots over the turkey and sprinkle with cheese.
  • Place the dish in the oven and Bake for about 22-25 minutes, or until the tater tots are crispy and the cheese is melted. Remove from the oven and serve hot with taco toppings of your choice. Enjoy!
