Instructions
In a medium mixing bowl, combine cocoa powder, flour, baking soda, and salt.
Combine the sugar and butter in a stand mixer or hand mixer on medium-high speed.
Blend the vanilla and eggs together at medium speed, scraping off the sides of the bowl as needed.
Combine 1/2 of the dry ingredients, and mix at a low speed until well combined.
Continue with the remaining dry ingredients. Then add the caramel chips. For at least 60 minutes, cover and refrigerate.
Preheat the oven to 350 degrees Fahrenheit. Use parchment paper or silicone baking mats to prepare 3 cookie sheets. Drop the dough on the baking sheet 1 1/2 inches apart, using a spoon or cookie scoop.
Bake the cookies for about 7 to 8 minutes on the middle rack. Once the cookies are done baking, sprinkle them with sea salt, and allow them to cool on the baking sheet for about 5 minutes before transferring to a cooling rack.
To keep their chewy texture, store them in an airtight container with slices of bread that can be kept for five to seven days. Enjoy!
