Ingredients
  

  • 2 pounds tomatillos
  • 5 cloves garlic peeled (crushed)
  • 2-3 tablespoons New Mexico red chile powder
  • 2 teaspoons ground cumin
  • 2 tablespoons lime juice
  • Tabasco (to taste)
  • Salt and pepper (to taste)

Instructions
 

  • Preheat the oven to 375° Fahrenheit. On a baking sheet, place whole tomatillos and crushed garlic. Bake for about 25 to 30 minutes, until charred.
  • Then, combine the tomatillos and garlic with the red chile powder, cumin, and lime juice in a food processor or blender. Then process until smooth.
  • Then add Tabasco and process again. Add salt and pepper to taste.
  • It can be served immediately or chilled until ready to eat in the refrigerator. Enjoy!

Notes

  • Use fresh and quality ingredients. 
  • Be sure to blend everything together quickly and thoroughly before serving, so that the flavors meld together perfectly. 
  • Consider using chili powder or ground cumin instead of fresh chili peppers if you don't have any on hand. These spices can be more easily adjusted to your own taste.
  • You can make the salsa ahead of time and store it in an airtight container for up to three days or you can serve it fresh as part of a taco or burrito bowl.
  • Serve with tortilla chips, enchiladas, tacos, burritos, and more!
