Slice potatoes into french fries, and place them into cold water so that they will not turn brown while the oil is heating.
In a large skillet, heat the oil over medium-high heat. Sift the flour, garlic salt, onion salt, and paprika into a large bowl while the oil is heating.
Pour in enough water to make the mixture drizzle from a spoon. Once the batter is ready, dip each potato slice into it.
Place them in the hot oil without touching at first. You must add the fries one at a time to the skillet to avoid clumping.
Cook until golden brown and crispy. Remove and place on paper towels to dry.
