Ingredients
  

  • 3 tablespoon peanut oil
  • 1/2 cup sliced green onions
  • 1/4 cup frozen English peas
  • 1/2 cup fresh bean sprouts
  • 1/2 cup salad shrimp, peeled and deveined
  • 1/2 cup finely diced ham
  • 2 eggs (lightly beaten)
  • 2 cups cold (cooked rice)
  • 1/4 cup soy sauce

Instructions
 

  • In an uncovered wok, heat the oil to 325°F. Stir-fry onion for 30 seconds.
  • Stir-fry for 1 minute with the next 3 ingredients. Add eggs; scramble; cut apart with a spatula; mix with other ingredients. Push the eggs to one side of the wok.
  • Stir-fry the rice and soy sauce for about 2 minutes until well mixed. Immediately serve.
