In an uncovered wok, heat the oil to 325°F. Stir-fry onion for 30 seconds.
Stir-fry for 1 minute with the next 3 ingredients. Add eggs; scramble; cut apart with a spatula; mix with other ingredients. Push the eggs to one side of the wok.
Stir-fry the rice and soy sauce for about 2 minutes until well mixed. Immediately serve.
