Ingredients
  

  • 5 Turkey tails
  • 4 tsp Turkey rub
  • 4 oz Honey (½ cup)
  • 5 Garlic cloves minced
  • 1-½ cups White vinegar
  • 1-½ cups Water
  • 2 tbsp Soy sauce
  • 2 tbsp Dijon mustard

Instructions
 

  • First of all, inspect the turkey tails and check for any feathers or feather shafts. Most of the time, the tails are clean and ready to use but you have to still check them just in case. For good handling, you can use a paper towel that will provide you with a firm grip.
  • Take a large bowl and add honey, 2 tsp of turkey rub, soy sauce, garlic, and water in it. Combine these ingredients well. 
  • Add the turkey tails to the marinade and flip them so that they are evenly and well coated with the mixture. Cover the bowl and put in the refrigerator for 5 hours. For excellent results, you can even refrigerate overnight.
  • After the marination of your desired time, take the bowl out of the refrigerator and take the turkey tails out of the marination mixture. Using paper towels, pat the turkey tails dry.
  • Take a separate bowl and add white vinegar, 1 tsp of turkey rub, garlic, and Dijon mustard in it. Combine them well. 
  • Take a roasting pan or any available dish that must be shallow and put the marinated turkey tails in it. Pour the vinegar mixture on the turkey tails. Make sure the even distribution and coating of the vinegar mixture.
  • Preheat the smoker to 225 degrees Fahrenheit.
  • Take the roasting pan or shallow dish containing turkey tails and place it in the uppermost rack of the smoker. Cook for half an hour. Keep adding the marinade during the cooking process so that the tails do not dry out and remain moist.
  • Cook until 160 degrees Fahrenheit temperature is reached inside the smoker. Check the tails and further cook if needed. 
  • Dish the turkey tails out. Let them cool for some time. Serve with your favorite sauce. Bon Appetit!
