Ingredients
  

  • 2 1/2 lb ground beef
  • 1 lb ground pork
  • 1 cup large celery (diced)
  • 1 cup large onion (diced)
  • 6-12 oz onion & garlic croutons (from pepperidge farms)
  • 1 lbs butter
  • poultry seasoning
  • salt and pepper (to taste)

Instructions
 

  • Place a large bowl or pot near the stovetop to conveniently add ingredients as they are cooked.
  • Use a deep fry pan with straight sides, as well as a pair of tongs and spoonula.
  • Assemble the necessary ingredients, estimating quantities as desired.
  • Consider prepping ingredients ahead of time to streamline the cooking process.
  • For enhanced flavour, combine ground pork with sausage and heat in the frying pan with a small amount of butter.
  • Cook the beef and sausage mixture in batches, breaking it up and ensuring it is fully cooked before adding it to the waiting pot or bowl.
  • In the same pan, sauté the celery in butter until almost cooked, then add to the bowl and mix thoroughly.
  • Next, sauté the onion in butter until wilted, but not browned, and add to the bowl, mixing well.
  • Add seasonings to taste and mix thoroughly.
  • Finally, add croutons to the mixture, mixing well and repeating several times over the next 15-20 minutes.
  • Stuff the turkey immediately with the hot stuffing mixture, placing some in the cavity and some in the neck. Cook any remaining stuffing in a separate pan alongside the turkey.
  • If using a separate casserole to cook the stuffing, consider using some pan drippings to enhance its flavour.
  • Serve with mashed potatoes, peas, turnip/carrot mash, cranberry sauce, Polish rye or sisal bread, and gravy.
