In a pan, add water and sugar. Simmer the mixture over medium heat until all the sugar dissolved.
Add chopped lavender that is fresh. Allow to sit for about 5 minutes. If you want the best flavour allow it to sit a room temperature for about 30 minutes.
Strain the lavender in a strainer and store it in a jar and refrigerate for up to 2 to 3 weeks.
In a cocktail shaker, mix all the ingredients and combine well.
Pour over ice into a cocktail glass and garnish with fresh lemon slices and chopped lavender. If want more attractive add lemon seltzer for a lighter spritzer. Have Sip!
