This recipe for Special K Bars is a low-carbohydrate, high-protein breakfast that will keep you feeling full and fueled all morning. In a saucepan, combine 1 cup granulated sugar and 3/4 cup light corn syrup. Heat the mixture over medium heat.
After it reaches a boil, remove it from the heat and stir in 1 cup of creamy peanut butter. Be sure that the peanut butter is at room temperature.
In a large bowl, combine six cups of original special K cereal. Stir in the peanut butter mixture.
Use a large spoon to stir everything together. Due to the cooling of the sugars, you’ll need to move quickly to prevent them from becoming too firm.
Mix everything well, then press the cereal mixture into a buttered 9 x 13-inch baking dish.
In a saucepan over low heat, melt 1 cup semisweet chips and 1 cup butterscotch chips. Be careful not to overheat. It can burn the chocolate or scald it.
Pour the melted chocolate over the baking dish and smooth it out. Add a little sea salt to balance out the sweetness of the k bars. Allow it to sit for about two hours before serving.
