Ingredients
  

  • 3 Large sweet potatoes peeled and diced
  • 1 tbsp All-purpose flour
  • 1 cup Heavy whipping cream
  • ½ orange peel and cut into thin strips
  • 1 pastry for a pie crust
  • 2 eggs
  • 1 tbsp Juice
  • 1 tbsp Salted butter melted
  • 1 tsp Vanilla extract
  • 1 1/2 tsp The ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1/2 tsp Ground ginger
  • 1 pinch Ground cloves
  • 1 pinch Salt
  • 1 cup White sugar

Instructions
 

  • Fill a large pot with water and add sweet potatoes and orange peel. Bring to a boil. Simmer for 10 minutes or until potatoes are soft. Remove from heat and let cool. Remove the orange peel.
  • Preheat the oven to 400 degrees F. Put pie crust on a 9-inch pie plate. Use a potato masher or fork to mash cooled sweet potatoes. Add the eggs and blend until well combined.
  • Pour pineapple juice, butter, and vanilla extract into a bowl and mix well. Add the flour, cinnamon, nutmeg, ginger, cloves, and salt. Add the sugar and mix well. Add the heavy cream and combine well.
  • Fill the pie crust with the sweet potato mixture. Place in the preheated oven and bake for 40-50 minutes, or until a toothpick inserted in the center of the cake comes out clean. Put a cloth on a table or window sill to cool off.
