Karioka is a popular Philippines sweet treat that is mostly made with rice flour. These treats are traditionally made with iced green tea, but today they are becoming increasingly popular during the hot summer months. Combine all the ingredients for Dough in a large bowl and mix well. After it forms a dough, form it into small balls about the same size as fish balls, then set them aside.
In a wok, heat enough oil for deep-frying and drop the shaped dough pieces one by one, deep-frying until golden brown in colour.
Remove the balls from the wok, set them aside and allow them to drain on a wire rack.
Mix all glaze ingredients in a saucepan, then cook over medium heat until sauce thickens.
Pour the glaze over the Karioka balls to coat them. Put them on skewers, and serve while hot.
