Korean-Style Beef Short Ribs Recipe

Ingredients
  

  • 1/2 Korean pear (or Asian pear, Nashi pear)
  • 1/2 red apple
  • 1/2 kiwi
  • 1/2 yellow onion
  • Splash of water
  • 1.5 cups (360 ml) soy sauce
  • 1/2 cup sugar
  • 1/2 cup mirin
  • 1/4 cup light corn syrup
  • 3 tbsp toasted sesame oil
  • 3 tbsp minced garlic
  • 1/2 tbsp minced ginger
  • 1 cup chopped green onions
  • 1.5 cups (360 ml) water

Instructions
 

Marinade

  • First, give those ribs a good rinse under the tap. Then, set them aside.
  • For the marinade, peel and roughly chop the pear, apple, kiwi, and onion. Pop them in a blender. Add a splash of water and blend until smooth. Pour the mix into a mixing bowl.
  • Add the soy sauce, sugar, mirin, corn syrup, sesame oil, garlic, ginger, green onions, and water to the mixing bowl. Mix it all together.
  • Grab a container for your precious galbi. Spoon some marinade onto the bottom. Place the ribs in there nicely, leaving some space between each. Drizzle more marinade over the ribs.
  • Add another layer of ribs and repeat the process. Pour all the leftover marinade on top. Place the dish in the fridge to marinate for at least 2 hours or overnight.
  • The marinated, uncooked ribs will last around 3 days in the fridge. If not, just place them (with 1-2 spoons of marinade) in ziplock bags and freeze them.
  • Place the ribs in a large, cold pan and add some marinade (about 1/3 cup). Turn on the heat to medium-high. The cooking will be somewhere between braising and searing.  
  • Once it starts boiling, flip the ribs every now and then.
  • Once most of the liquid has evaporated, lower the heat to medium. Cook until they're nicely charred on the outside, just how you like them. Turn off the heat, then grab some tongs and scissors to cut into small pieces.
  • Place on a serving plate. Serve with a bowl of hot rice and some salad. Enjoy!
