Blueberry yogurt muffins are a perfect treat to have when you are craving something sweet and fruity. The blueberry layer is what makes it so good. This delicious recipe is a very easy muffin to make and they are a great base for different combinations of toppings. It makes a good snack or breakfast. They are not to be confused with the more famous tres leches cake, which is too rich to really stand out.

For The Batter 1 cup All-purpose flour 1/2 cup Greek yogurt non-fat 3/4 cup Blueberries lightly coated in flour 1 Egg 1/3 cup Granulated sugar 3 tbsp Honey 1/4 cup Vegetable oil 1/2 tbsp Vanilla extract 1/2 tsp White vinegar 1/2 tsp Baking soda 1/4 tsp Salt For The Topping 3 tbsp Brown sugar 3 tbsp Granulated sugar 6 tbsp All-purpose flour 1/16 tsp Salt 2 1/5 tbsp Butter
Preheat the oven to 350 degrees Fahrenheit. Put liners into a muffin pan and spray them with a quick spray.
Melt the butter and let it sit for a few minutes. Combine all topping ingredients besides the butter.
To make crumbles, take some of the melted butter and mix it with a fork. Then mix all the butter together. Place aside.
Use an electric mixer to beat the egg until thick and frothy. Stir in the sugar, oil, and honey.
After that, mix the vanilla, vinegar, baking soda, and salt together. Add the yogurt and flour. Mix well to incorporate the blueberries.
Fill the muffin cups with batter, add crumble to the top evenly and bake for 15-20 minutes.
Allow them to cool for 5 minutes. Transfer them to a cooling rack. The muffins are ready to eat now.
