Starbucks Blueberry Yogurt Muffins Recipe

Blueberry yogurt muffins are a perfect treat to have when you are craving something sweet and fruity. The blueberry layer is what makes it so good. This delicious recipe is a very easy muffin to make and they are a great base for different combinations of toppings. It makes a good snack or breakfast. They are not to be confused with the more famous tres leches cake, which is too rich to really stand out.

Ingredients
  

For The Batter

  • 1 cup All-purpose flour
  • 1/2 cup Greek yogurt non-fat
  • 3/4 cup Blueberries lightly coated in flour
  • 1 Egg
  • 1/3 cup Granulated sugar
  • 3 tbsp Honey
  • 1/4 cup Vegetable oil
  • 1/2 tbsp Vanilla extract
  • 1/2 tsp White vinegar
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt

For The Topping

  • 3 tbsp Brown sugar
  • 3 tbsp Granulated sugar
  • 6 tbsp All-purpose flour
  • 1/16 tsp Salt
  • 2 1/5 tbsp Butter

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit. Put liners into a muffin pan and spray them with a quick spray.
  • Melt the butter and let it sit for a few minutes. Combine all topping ingredients besides the butter.
  • To make crumbles, take some of the melted butter and mix it with a fork. Then mix all the butter together. Place aside.
  • Use an electric mixer to beat the egg until thick and frothy. Stir in the sugar, oil, and honey.
  • After that, mix the vanilla, vinegar, baking soda, and salt together. Add the yogurt and flour. Mix well to incorporate the blueberries.
  • Fill the muffin cups with batter, add crumble to the top evenly and bake for 15-20 minutes.
  • Allow them to cool for 5 minutes. Transfer them to a cooling rack. The muffins are ready to eat now.
