  • 1 Shortcrust pastry roll 1
  • 75 g Ground almonds 75 g
  • 2 Egg yolks 2
  • 20 cl Milk 20 cl
  • 80 g Powdered sugar 80 g
  • 20 g Flour 20 g
  • .5 tbsp Coffee Vanilla powder 0.5 tablespoon
  • 20 g Butter 20 g

Instructions
 

  • Preheat your oven to 210 degrees. Spread butter on the pie dish and unroll the dough. With a fork, prick the bottom without piercing the dough. Let bake for ten minutes.
  • During this time, heat the milk with vanilla. Beat the yolks with 40 grams of sugar until they turn white in a bowl.
  • Add the flour to the boiling milk and mix well. Stir it constantly over low heat until it boils, then return it to the saucepan. Add the almonds once it has cooled.
  • Fill the pre-cooked pie shell with this cream. Slice the peaches into thick slices and arrange them in the pre-cooked pie shell.
  • Add the remaining sugar and bake for 20 minutes at 180 ° C. Unmold after cooling. Enjoy!
