Ingredients
  

  • 5 tablespoons Unsalted butter
  • 1 large head (about 5 cups)  Broccoli (cut into 1- to 2-inch florets, tender stems peeled and cut into 1/2-inch slices)
  • 1 tablespoon Fresh sage (chopped)
  • 5 tablespoons All-purpose flour
  • 3 tablespoons Dry sherry
  • 1 cup Chicken broth (low-sodium)
  • 1 cup Milk
  • 1 cup Heavy cream
  • 1 pinch Freshly grated nutmeg
  • 1 bunch Scallions (chopped)
  • 1 1/2 cups  Gruyere cheese (shredded)
  • 3 1/2 pound Cooked chicken (boneless and skinless)
  • 1/2 cup  Sliced or slivered almonds (toasted)
  • 1/2 cup Parmesan cheese (grated)
  • 1/4 cup Breadcrumbs
  • Kosher salt (to taste)
  • Freshly ground pepper (to taste)

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit. Grease a shallow 3-quart casserole dish with butter.
  • In a large saucepan, boil salted water. Cook the broccoli until it is bright green and almost tender. Remove from heat, cool under cold running water, and pat dry. Set aside. 
  • In a large saucepan, melt 4 tablespoons of butter over medium heat. When the butter has melted and sizzled for a minute, add the sage and flour.
  • Whisk the roux frequently for about 2 to 3 minutes, without letting it brown. Stir in the sherry for about a minute to reduce it.
  • Stir in one cup of broth, heavy cream, milk, nutmeg, and salt and pepper to taste. Within six to seven minutes, bring the mixture to a simmer, whisking to remove any lumps. 
  • Stir the scallions and Gruyere into the sauce until they are melted, then remove from the heat.
  • In a large bowl, combine the sauce, broccoli, chicken, and almonds. Pour the mixture into a casserole dish.
  • In a small bowl, add 1 tablespoon butter, add Parmesan and breadcrumbs, and stir to combine. Pour the mixture over the casserole.
  • Place the casserole dish in the oven and bake for 35 minutes or until it is browned and bubbling. 
  • Barefoot Contessa Chicken Divan is ready. You can serve it with your favorite sides.
