Ingredients
  

  • 12 ounces Tillamook Shredded White Cheddar Cheese
  • 4 ounces Philadelphia Cream Cheese
  • 3/4 stick butter
  • 3 tablespoons flour or more as needed
  • 1 1/2 teaspoon chili powder
  • 1/3 teaspoon salt
  • 12 ounces of light flavor beer

Instructions
 

  • Melt butter in a pan over medium heat. Add the flour and stir to combine. Cook the roux for 10 minutes, stirring constantly, until it starts to darken.
  • To thicken the roux, add 3 tablespoons of flour, and whisk until a paste forms and the sauce starts to brown.
  • Pour in the beer and stir in the chili powder and salt. Stir constantly for approximately 5 minutes until the mixture thickens.
  • Add the cheese cream and stir until it is fully melted. Slowly add the shredded cheese in small amounts, stirring constantly until it melts and becomes a rich cheese sauce. Enjoy!
