- 12 ounces Tillamook Shredded White Cheddar Cheese
- 4 ounces Philadelphia Cream Cheese
- 3/4 stick butter
- 3 tablespoons flour or more as needed
- 1 1/2 teaspoon chili powder
- 1/3 teaspoon salt
- 12 ounces of light flavor beer
Step By Step Instructions To Make Mellow Mushroom Beer Cheese
Step 1
Melt butter in a pan over medium heat. Add the flour and stir to combine. Cook the roux for 10 minutes, stirring constantly, until it starts to darken.
Step 2
To thicken the roux, add 3 tablespoons of flour, and whisk until a paste forms and the sauce starts to brown.
Step 3
Pour in the beer and stir in the chili powder and salt. Stir constantly for approximately 5 minutes until the mixture thickens.
