Ingredients
  

For The Crust

  • 1⁄3 lb graham cracker (or 1 cup plus 2 1/2 Tablespoons graham cracker crumbs)
  • 5 tablespoons unsalted butter (melted)
  • 1⁄3 cup sugar

For The Filling

  • 3 egg yolks
  • 1 1⁄2 teaspoons key lime zest (grated)
  • 1 (14 ounces) can of condensed milk (sweetened)
  • 2⁄3 cup key lime juice (freshly squeezed)

For The Topping

  • 1 cup heavy whipping cream (chilled)
  • 3 tablespoons confectioners' sugar

Instructions
 

For The Crust

  • Heat the oven to 350 degrees Fahrenheit. Prepare a 9-inch pie plate by buttering it.
  • In a food processor, crush graham crackers into crumbs.
  • Combine melted butter and sugar in a food processor.
  • Using your fingers, press mixture evenly onto the bottom and up the sides of the pan, forming a neat border around the outside.
  • Bake for about 8 minutes or until the crust is golden and set. Place on a wire rack; keep the oven on.

For The Filling

  • Beat the egg yolks and lime zest at high speed for 5 minutes in an electric mixer fitted with the wire whisk attachment.
  • Add the condensed milk gradually and continue beating until thick, 3-4 minutes.
  • Add lime juice slowly to the mixer, mixing until just combined.
  • In a pie crust, pour the filling and bake for about 10 minutes until it begins to set.
  • Let cool on a wire rack, then refrigerate. It is best to freeze for 15-20 minutes before serving.

For The Topping

  • Using a mixer, whip the cream and confectioner's sugar until nearly stiff.
  • Cut pie into wedges and serve cold with whipped cream on top.
  • If desired, garnish with a slice of key lime.
