Heat all ingredients except apples in a 12-inch skillet until boiling. Cover the pot, reduce the heat, and let simmer for five minutes to blend the flavors. It is optional to use red food coloring, but it makes these look very attractive.
Meanwhile, core and slice apples into 1/4 inch thick rings. Half of the rings should be cooked at a time in liquid. Simmer for 3-5 minutes or until tender but firm. In the same liquid, dip out the first half of the apple rings and cook the second half.
Remove lemon slices and discard them. Pour liquid over all apple rings in a serving bowl. You can store it in the refrigerator for up to one week. You can serve this cold as a side dish or as an appetizer. You Can also be used as a topping for ice cream. Enjoy!
