To a large pot of water, add two pinches of salt and Bring water to a boil. Then add the uncooked macaroni pasta. Bring to a boil until tender.
Remove macaroni from the pot and strain. Stir in butter and macaroni until butter melts. Slowly stir in most of the cheese evenly. You can save 8 ounces for later toppings.
Mix in paprika, black pepper, onion, bell pepper, and 1/2 habanero or goat pepper. Mix well until the cheese is melted and blended.
Stir the eggs into the mixture lightly. Add evaporated milk gradually, pouring about a half cup at a time.
Mix well and spread evenly into a large baking pan measuring 13 x 9 inches. Place remaining cheese on top and loosely cover with foil.
In a 375°F oven, bake for one to one and a half hours, until the top is golden in color. let macaroni cool for 45-50 minutes until room temperature. Serve and enjoy!
