- 1.5 lbs Beef
- 15 oz Pinto beans
- 15 oz Kidney beans
- 1 can Beer
- 2 Bell peppers (chopped)
- 1 can Tomatoes (canned)
- 1 Onions
- 1 can Tomato paste
- ¼ cup Chili powder
- 5 cloves Garlic
- ½ tsp Cayenne pepper
- 2 stalks Celery (chopped)
- 1 tbsp Cumin
- 2 tbsp Oil
- 1 tbsp Oregano
For topping:
- Green onion
- Sour cream
- Cheddar cheese
- Corn chips
Cooking the Vegetables
Take a dutch oven.
Pour some oil in and heat.
Add celery, onions, and bell pepper to the hot oil.
Saute the vegetables for 5 minutes.
Make them soft.
Add the diced garlic.
Further cook for 2 minutes.
Cooking the Beef
Add beef to the dutch oven.
Stir in the beef.
Make sure the ground beef is not sticking to the pan. For this purpose, keep stirring.
Cook it for 5-6 minutes until it becomes brownish.
Adding Herbs and Spices
In the Dutch oven that has cooked beef and vegetables, add oregano, cumin powder, and cayenne powder.
Stir thoroughly to mix the ingredients well.
Cook for 2 more minutes.
Then add tomato paste to this mixture.
Mix it well to get the best taste.
Add beer and canned tomatoes.
Mix them well.
Add kidney beans and pinto beans.
Thoroughly stir everything so that they get mixed well.
Boiling
Keep cooking until the mixture gets boiled.
Lower the flame.
Bring the mixture to a simmer at medium heat for two hours by covering the lid.
Do not forget to stir from time to time otherwise the ingredients will burn or stick to the pan.
Dish out the chili and top it with green onion, sour cream, cheddar cheese, and corn chips.
