In a large salad bowl, combine the lettuce, artichoke hearts, onion, and pimento. Toss the ingredients together and set aside.
In a separate container with a tight lid, combine the remaining ingredients for the dressing.
Vigorously shake the container until the dressing is well-blended.
Pour the dressing over the salad and toss the ingredients together until they are evenly coated.
Refrigerate the salad for approximately 30 minutes before serving to allow the flavors to marinate.
Note that the dressing should not be added to the salad for more than 30 minutes before serving, as the acids in the dressing may break down the lettuce and cause it to become wilted.
