To clean chunchullo, wash the intestines thoroughly with warm water and mild soap.
in a large pot, Pour 8 cups of water. Then, add chopped onion, garlic cloves, and herbs. Bring it to a boil, and reduce it to a simmer for about 30 minutes.
Transfer the Chunchullo to a large pan and add the water/vegetable mixture over it. Bring it to a boil and simmer for about 30 minutes.
After 30 minutes, the Chunchullo is ready, but the centre may still be slightly firm. You can serve it with lemon wedges and herbs for added flavour, or you can choose to sprinkle some salt and add mustard if you prefer.
