Ingredients
  

  • 2 tbs Vegetable oil
  • 3 lb Beef short ribs about 8
  • 1/2 cup  Yellow onion chopped
  • 1 Carrot chopped
  • Leek chopped, white part only
  • 3 Cloves garlic smashed
  • 2 Roma tomatoes chopped
  • 2 cups  Red wine
  • 2 Sprigs of rosemary (fresh)
  • Sprigs thyme (fresh)
  • Sprigs oregano (fresh)
  • 2 cups  Beef stock

Instructions
 

  • To start, preheat the oven to 350°F. Warm up the vegetable oil in a Dutch oven over medium heat, creating the perfect foundation for your braised beef short ribs.
  • Sear and brown the short ribs on all sides and remove them from the pan.
  • Add the carrot, onion, garlic, tomatoes and leak. On (medium) heat, cook the onion until soft.
  • Elevate the flavours by deglazing the pan with red wine, adding aromatic herbs and savoury beef stock. Bring it to a boil and let the flavours meld together for a tantalizing finish.
  • Return the seared short ribs to the Dutch oven and cover them with enough water. Bake for 3 hours, checking the liquid levels at the 1-hour and 2-hour marks. 
  • Remove the pan from the oven, skim off the fat, and strain the liquid into a saucepan. For about 10 minutes, heat the braising liquid on high.
  • Don't forget to save any leftover braising liquid if you have extra short ribs. You can use it for future culinary creations as it is delicious and versatile.
